This weekend, me and my friends did a belated Secret Santa ‘party’. And since I recently got the baking book Tanya Bakes, I decided to put it to use and find a nice recipe. My eye immediately fell on the Cheesecake & Dark Chocolate cupcakes. So I decided to give them a try, and they turned out to be a big success!

Cheesecake & Chocolate Cupcakes

  • What you’ll need:
  • ~ For the cheesecake filling ~
  • 250 gr. cream cheese
  • 100 gr. caster sugar
  • 2 eggs
  • 1/2 tsp. sea salt
  • 1 tsp. vanilla extract
  • 50 gr. dark chocolate chips
  • ~ For the chocolate filling ~
  • 50 gr. softened unsalted butter
  • 180 gr. caster sugar
  • 1 egg
  • 1/2 tsp. vanilla extract
  • 60 gr. cocoa powder
  • 100 gr. plain flour
  • 2 tsp. baking powder
  • 50 gr. milk chocolate chips
  • 160 ml. milk
  • ~ For the icing ~
  • 500 gr. icing sugar
  • 250 gr. softened butter
  • 1 tsp. vanilla extract

Start by preheating the oven at 180ºC (350ºF) and line a cupcake tray with some cupcake cases. The recipe said it’d make 12 cupcakes, but I managed to get 18 out of it. So you might have to bake it in two loads.

Start with the cheesecake filling by mixing together the cream cheese and caster sugar. Next, add in the eggs one at a time, and stir in the salt, vanilla and dark chocolate.

Next, we are making the chocolate filling. Start by mixing the butter, caster sugar, the egg and the vanilla. Then, fold in the flour, cocoa powder, milk chocolate and the milk until it’s a smooth batter.

Put about one tablespoon of the cheesecake filling into each cupcake case. Then fill them off with the chocolate batter until they’re 3/4 full. Bake for around 20 minutes (for me, the perfect baking time was 24 minutes), and cool on a cooling rack afterwards.

For the icing, combine all of the ingredients together untill smooth. If it is a bit too thick to pipe, add in a splash of milk. Pipe onto the cooled cupcakes and finish them off with some chocolate shavings! And then, it’s time to dig in because these cupcakes are irresistable!

I also feel like these would be perfect to make around Valentine’s since it’s rich with cheesecake and chocolate (2 of some of my favorite things! lol).     1. They are perfect for a little cheat day! I want to try the orange cheesecake so badly! But we don’t have Terry’s chocolate orange where I live so I have to find a replacement. x
