As December is starting to approach, I thought it would be appropriate to start bringing out the Christmas recipes! I have been excited for the Christmas season for months, so I will take any opportunity to do or make something Christmassy! Today, I made these amazing gingerbread cupcakes. And let’s be honest, what baking is more festive than gingerbread?!

  • ~ What you’ll need ~
  • 75 gr. butter
  • 100 gr. caster sugar
  • 125 ml. honey (or molasses)
  • 1 egg
  • 1 egg yolk
  • 175. plain flour
  • 1 tbsp. cocoa powder
  • 1 1/4 tsp. ground ginger
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground allspice
  • 1/2 tsp. ground nutmeg
  • Pinch of salt
  • 1 tsp. baking soda
  • 125 ml. milk

Start by preheating the oven to 170ºC (350ºF) and lining a cupcake tray.

Mix together the butter and sugar. Add the honey and the egg and egg yolk. Then get another large bowl and sift together the flour, cocoa powder, ginger, cinnamon, allspice, nutmeg and salt. Add this mixture to the butter and sugar mixture until it’s  just combined.

In a small pan heat the milk, but be careful not to bring it to a boil. Then dissolve the baking soda into the milk. Add this to the other bowl and mix until combined.

Divide the mixture over the cupcake cases. I used small squares of parchment paper to line my cupcakes because I thought it would give them a nice, rustic look. Then bake for around 20 minutes. And yes, your house will smell amazing, which is a nice extra!

After baking, let the cupcakes cool for around 10-20 minutes. I topped them off with the cinnamon cream cheese frosting that I also used for my pumpkin spice cupcakes.

These cupcakes are so nice and gooey, and they taste delicious! Perfect with a hot cup of tea and a Christmas movie. Let me know what your favourite holiday treats are!
