Rainy days are upon us. And one of my favourite things to do on these rainy days, is bake! This time, I went for this super easy and delicious plum tart. It’s my mothers recipe and I love it! I’m one of those people that isn’t the biggest fan of warm fruit, but for this tart I’m happy to make an exception. It’s one of those comfort foods to eat at night on the couch while watching a nice tv show. Candles lit, cozy sweater on, a piece of plum tart, and chill mode on.
What you’ll need:
- ~ For the crust ~
- 150 gr. sugar
- 2 tsp. of vanilla sugar
- 1/2 tsp. of baking powder
- 250 gr. flour
- 50 gr. softened butter
- 2 large eggs
- ~ For the filling ~
- 750 gr. plums
- 25 gr. sugar
Start by lining a baking tray with baking paper, and preheat the over to 170ºC (340ºF). Cut the plums in half and remove the seeds.
Then stir together the sugar, vanilla sugar, baking powder, flour, butter and eggs. I started by mixing the dry ingredients first, and then gradually added the butter and the eggs.
After mixing the dough, spread it out on the baking paper. Make sure the mixture is spread evenly. Then cut the plums in little parts, I cut my halfs in four smaller parts. But you can cut them however you like, even in small slices. Make sure to press the plums into the dough. Then sprinkle the sugar and cinnamon over the top.
Bake the tart for 20-30 minutes, until the crust is golden brown.
This tart is definitely most delicious when you eat it warm, so just let it rest for a bit after taking it out of the oven. Then, dig in! I prefer it with a bit of whipped cream. But you can also eat it with some ice cream, or just some coffee!
